While large farms that sell to chain grocery stores focus their growing practices on producing the most uniform and aesthetically pleasing produce possible, smaller farms usually have a different set of priorities. Small farms generally prioritize focusing on growing a wide variety of items rather than monocropping to create a biodiverse growing environment as well as ensure that they have enough produce to sell even if they experience the loss of one type of crop. Most farms aim to reduce the input of non-organic chemicals as fertilizers, herbicides and pesticides. This means that they may sacrifice the perfect looking produce in exchange for growing healthier food and healthier soils. Small producers may also choose seeds like heirloom varieties that produce the most vibrant tasting produce rather than plants with a very high yield and uniform product.
